Alle cinque, tè e Wagashi

Farina di riso, cereali e crema di fagioli rossi di soia. Forma e colori si ispirano al cambiamento delle stagioni, riproducendo i fiori di ciliegio in primavera, lo scorrere dell’acqua in estate, le foglie d’acero in autunno e i fiocchi di neve in inverno. Sono i wagashi, i dolci tipici giapponesi. Sono talmente belli che si può tranquillamente parlare di “arte commestibile” e, oltre ad essere serviti durante la cerimonia del tè, sono considerati un dono prezioso, di lusso. Visitando la pasticceria più antica di Tokyo, Toraya, si possono trovare wagashi di ogni forma, colore e gusto. Nata 480 anni fa e da allora fornitrice dell’imperatore, ha aperto negozi in tutto il mondo e una caratteristica tea-room nello storico Hotel Imperial di Tokyo. Di gran moda e davvero elegante, il tè di lavoro o per qualche ricorrenza. Parola di wagashi-dipendente!
